The Montepulciano d'Abruzzo DOC of Tenuta Tre Gemme is a red wine with an intense, fresh, soft and balanced taste.
Maceration on the skins generally lasts for about 15 days at a controlled temperature not exceeding 29 ° C. Sulfur dioxin is used in minimal doses. In the first two days the fermenting grapes are racked and returned (delestage technique) twice. During this process some seeds are removed to reduce the bitter and herbaceous notes. Subsequently the fermenting mass is reassembled every 3-4 days for about 10 minutes at a time.
Upon racking, the wine undergoes a soft pressing at a maximum of 12 atm. The resulting flower must is then stored in stainless steel or cement tanks pending further management.
On the nose it offers the smells of cherry jam, vanilla and cocoa and is excellent paired with braised meats and cheeses. Controlled but not induced malolactic fermentation.
Finally it undergoes a maturation of 9 months in 35 hl Slavonion oak barrels.
